Teriyaki Beef and Spinach Stir Fry

This flavorful and colorful beef stir fry that can be whipped up in just over 20 minutes will quickly become one of your family’s favorites in the weeknight rotation. Serve over rice or noodles for a complete meal.

Ingredients
2 Tbsp. canola oil, divided
1 lb. stir fry beef
1/2 onion, thinly sliced
1 red pepper, cut into thin 1-inch strips
2 (6 oz.) bag baby spinach
1 cup S&F Ginger Teriyaki Sauce
1 (8 oz.) can sliced water chestnuts, drained and rinsed
Directions
- Add 1 Tbsp. oil to a large skillet over medium-high heat. When hot, add the beef. Cook and stir until beef is almost cooked through, about 2 minutes. Transfer the beef to a plate. Drain away fat and carefully wipe out the pan.
- Add the remaining oil. When hot, add onions and red pepper. Cook and stir until the vegetables begin to show some color, about 4 minutes.
- Sprinkle the spinach into the skillet a few handfuls at a time. It will wilt as it’s stirred into the other vegetables.
- Add the S&F Ginger Teriyaki Sauce, water chestnuts, and beef. Cook until sauce is heated through.
